Super Easy Gluten Free Peanut Butter Cookies

Do you ever get motivation to make something based on a random craving? Maybe that I how you found my blog in the first place. Recently, I randomly wanted peanut butter cookies so bad. I have a favorite recipe in a cookbook that, after ripping my apartment apart as I could not find it, I realized I forgot in Vancouver during my last trip (Note to Mom: Please bring it when you come to visit). 

I had tried different recipes before, so some googling I decided to give the recipe I found on The Wannabe Chef a go I highly recommend checking out this website, he has several mouth watering variations - I will post mine here. I used:
  • 1 cup creamy peanut butter 
  • 1 large egg
  • 1/2 cup organic cane sugar
  • 1/4 cup white chocolate chips
  • 1/2 teaspoon baking soda
  • 1/4 cup white chocolate chips.
Preheat your oven to 350F. This recipe is so easy - just put all the ingredients into a bowl and mix. I added the chocolate chips after everything was mixed, but there are no rules here. I just used my rubber spatula so I would have less to clean up (so amazing for the lazy baker in me).

The favorite part of this for me was using my new cookie scoop. I had my eye on this little kitchen gadget for what seemed like forever, I was just really too cheap to shell our the $13 for it (note: You can find basically the same thing for about a fiver in TJ Maxx). I finally splashed out on it - and was so glad I did. Getting the dough into ball form and onto the baking sheet was so much more efficient and I am completely in love with the scooper.

Getting back to our cookie steps though, using a normal spoon or fancy-pantsy cookie scoop, drop onto a cookie sheet and press lightly on top with a fork for classic peanut butter cookie grooves. Bake 15-20 minutes then cool on wire rack. Then enjoy!
