Simple French Inspired Meal

If you read my post about pastries in Paris, you already know I bought a few gluten free baguettes to bring home with me. I had big plans in mind for these, two are earmarked for enjoying with French Onion soup and the other two I wanted to use for a baguette sandwich type thing.

On my first trip to Paris, I enjoyed a lovely meal with my mom with constituted baguettes topped with garlic butter, bacon and cheese. So simple, but so amazing. And luckily easy to replicate at home.

I just grated whatever cheese was in my fridge (it happened to be Dubliner Sharp Cheddar), bacon and garlic butter. I made garlic butter by adding garlic into butter and mashing it about (I am sure that is the technical term for it anyway).  Top baguette and put in oven on broil for 2-5 minutes, basically until it is nice and toasty. Serve with soup, salad, whatever your French inspired heart desires!

This time I served with salad topped with sliced sweet peppers and a spritz of extra virgin olive oil.
