Most Sundays I spend in the kitchen. I prepare food for the week, bake some treats, really just make 2 or 3 things I really want to eat and know I can enjoy. It also tends to be the day I put a proper effort into making a proper dinner. I probably do this since back home I spent most Sunday's at my parent's house for dinner where my mom would make amazing meals.
Last Sunday I decided to really rock that meal and everything had to be from scratch - I thought I would share what I made since it was pretty good (I definitely had a happy belly afterwards anyway!).
- Cinnamon Chicken. This is really easy, just dust a chicken breast with cinnamon a bit of sea salt and cook. I made this one in the oven (400 F, about 10 minutes on each side). Really delicious.
- Sweet Potato Gnocchi with Gorgonzola Sauce. I cooked the sweet potato gnocchi I previous posted about, and it was really good. I decided to make gorgonzola sauce inspired by gnocchi I had in Rome years ago, however this sauce did not turn out well. Lesson: Lactaid does not behave like normal milk when heated.
- Spinach Salad. This was simply baby spinach with a light spray of extra virgin olive oil and some salt, pepper and basil on top. Very nice side dish, and has been on my plate at least one meal a day for the past month.
