Paleo Meal Idea | Bacon Wrapped Filet Mignon

Crazy ideas happen when strolling the meat section of Trader Joe's. For example, I was stocking up on the Applewood Smoked Bacon my husband loves, and decided to check out what else was in the area when I saw some  reasonably priced steaks (as TJ's is). I love bacon wrapped steak, so I decided I needed to eat that. Then my eyes met the filet mignon. Sold.

For as tasty as this is, and as nice as steak always looks, it's really stupid simple to make. Cut fat off the steak. Season with salt and pepper. Wrap in bacon, securing with toothpicks. In a grill pan, sear on your oven for 2 minutes per side, then into the oven at 375F until cooked to your liking, flipping once. 

I decided to serve with grilled asparagus and carrots. These are course were very easy to make as well, clean and cut. Spray with extra virgin olive oil (I love my Misto). Sprinkle with some lemon salt and grill for about 20 minutes (flipping after 10 minutes to ensure everything is cooked evenly). Result was a really easy to make, delicious paleo dinner.
