Gluten Free Paleo Pumpkin Muffins


Gluten Free Paleo Pumpkin Muffins
Admittedly I'm a carb junkie. This fact has made me miss bread-type products in my first few days of paleo. Luckily though, this has lead me to find new recipes. In particular, I was really excited to find the Paleo Plan website, and subsequently a recipe for Paleo Pumpkin Muffins. I am a massive fan of pumpkin, and obviously they are gluten free and dairy free (and could be egg free/vegan by subbing water and flax meal for the eggs).

So I made them with a few modifications of my own:
1½ cups  Almond Meal/Flour
3/4 cup  canned pumpkin
3 large eggs
1 tsp baking powder
1 tsp baking soda
1 tsp  ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/8 tsp sea salt
2 tbsp raw honey 
2 tsp Maple Almond Butter
2 tbsp dark chocolate chips
1/4 cup chopped pecans (or walnuts, cashews, whatever paleo nut you like)

Simply put all ingredients into bowl except the dark chocolate chips and chopped pecans and mix well. Spoon into well greased muffin pan and then top with chocolate and pecans (I just a 1/4 cup to measure it out, and it yielded 9). Bake for 25 minutes at 350F. Then enjoy those bad boys!

I was very impressed and I think these will easily become a new staple in my kitchen!
